Since tomorrow is Valentine's Day, it's time for me to bake some scrumptious cookies for my boyfriend! Last year, I baked him some crunchy vanilla sugar cookies (which I considered baking them again this year), till I found the "Brownie Roll-Out Cookies" recipe from the Shutterbean blog on Pinterest. I scanned through the recipe and it seems doable! So I thought "why not bake this instead?" I'm always into simple yet delicious-sounding recipes as I'm not the best at baking. That's why I decided to bake this for this year's Valentine's Day. I figured I would share my slightly adapted recipe as well as how my version turns out to be!
Here are the ingredients that you will need:
For the cookies
- 3 cups all purpose flour
- 2/3 cups unsweetened cocoa
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 16 tablespoons unsalted butter, softened
- 1 1/4 cups sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup white chocolate bar
- 1 cup white chocolate bar
- 2 teaspoon unsalted butter
Step 1 - Mix flour, cocoa, salt, and baking powder all together in a bowl and set aside.
Step 2 - Use an electric mixer to beat the butter and sugar until well-mixed. Add eggs one at a time. Pour in the vanilla extract. Gradually pour in the mixed dry ingredients. Put the dough in a container and cover it with a plastic wrap and let it chill for 2 hours.

Step 3 - Preheat the oven.
Step 4 - Roll out the dough on a counter to approximately 1/2 cm thickness. Cut the dough into heart shapes. Bake them on a parchment baking sheet for about 7 minutes. Take them out and let them chill for about 10 minutes.
Step 5 - Melt the white chocolate bar together with the unsalted butter. Put the mixture into a piping bag. Lightly drizzle the top of the cookies with the white chocolate mixture. Let it set for 5 minutes.
That's that! I personally prefer to not bake it for too long since I prefer it to be soft and moist. It is so simple yet it tastes stunningly delicious! I couldn't resist "tasting" a couple of them myself. I ended up making too much and decided to give away some of them. It's time to share some love anyways, right? :)
